Chicken and Wild Rice Soup


A bowl of this comforting chicken and wild rice soup will make anyone feel better! The addition of brown rice makes this soup just a little more healthy and the white sauce mix leaves out all the fat. That means it can count as one of your "better for you" meals you've resolved to make this New Year. I created this recipe the other night because I was in the mood for something new. Everyone at my table - all 6 of them - gave me a thumbs up and asked for seconds - that's a winning recipe in my book! Hopefully your family likes it too.

The leftovers freeze well so don't hesitate to make a large batch while you are at it. It will give you an easy day down the road.




Ingredients:
2 1/2 cups water
1 cup brown rice
3 Tbsp wild rice

Directions:
Bring to a boil and then cover and simmer for 30-45 minutes until water is absorbed and rice is tender. Start the rice cooking 30 minutes ahead of beginning the soup. Or cook it well in advance and store it in the fridge or freezer until it is needed.

Ingredients:
4 cups water
1 Tbsp chicken bouillon
4 stalks celery, chopped
4 carrots, chopped
1/2 cup onion, chopped
1 12oz. can chicken or 1 1/2 cups chopped cooked chicken or turkey
Cooked brown and wild rice (see instructions above)

2 cups hot water
1/2 cup + 2 Tbsp white sauce mix
1 1/2 tsp minced garlic
1/4 tsp dried thyme
1 tsp dried parsley
Salt and pepper to taste

Directions:
Combine the first seven ingredients in a large pot. Bring to a boil and simmer until vegetables and rice are tender. Combine the hot water and the white sauce mix with a wire whisk. Stir into the soup. Continue stirring for a minute or two until the soup begins to thicken. Add spices, adjust any amounts to taste and serve.

  1. This looks yummy Tammy! I'm going to make it tomorrow. Guess what? We are expecting a baby in June :) we are excited. We'll find out what we are having Feb 4th. Miss you terribly!
