Lasagna Soup


The first night I served this soup, my six year old told me he had a new favorite meal! Score one for mom! It really is simple to throw together and can be on the table in about 30 minutes.

Coconut Milk Ice Cream


We have many family members with food allergies so it can be challenging to feed them when they come for a visit. I always like to do my best at being a hostess and allow my sister-in-laws a bit of a break from planning all the meals so they can have a bit of a vacation. They always jump in and help in the preparation of meals when they are here, but they are so thankful that the planning and shopping has been done.

The studies are in and we all know how important having a family dinner is. I love this quote from Mark Twain. We have definitely been feeling this way around here lately. I turned to the internet for some inspiration of just what we could do with the cold weather keeping us inside for far too many days in a row. Simple, Delicious Tortellini Soup


On a cold winter day a hot, brothy soup hits the spot for me. We have differing opinions at our house. Most of my family prefers the thick, hearty, creamy chowder type soups. Don't get me wrong I like those too, but some days I want a bowl full of broth with just a little other goodness in there. This is a very simple soup to make and passes as fancy enough for company when paired with some warm homemade bread. I have been known to make a small batch just for me.

Since the groundhog saw his shadow, I'm thinking there will be plenty more soup nights around here. We woke up to snow at our house so winter is still in full force. We are not even supposed to hit 30 for a high this week!
