On a cold winter day a hot, brothy soup hits the spot for me. We have differing opinions at our house. Most of my family prefers the thick, hearty, creamy chowder type soups. Don't get me wrong I like those too, but some days I want a bowl full of broth with just a little other goodness in there. This is a very simple soup to make and passes as fancy enough for company when paired with some warm homemade bread. I have been known to make a small batch just for me.
Since the groundhog saw his shadow, I'm thinking there will be plenty more soup nights around here. We woke up to snow at our house so winter is still in full force. We are not even supposed to hit 30 for a high this week!
Tortellini Soup
Ingredients:
3 cups water
1 Tbsp
chicken bouillon

1 28 oz.
can diced tomatoes
|
1 pkg
frozen Cheese Tortellini
|
¼ cup
chopped, frozen spinach
Directions:

Make broth using chicken bouillon and water. Combine all
ingredients and simmer until noodles are very tender. Add additional broth if
the noodles absorb more than you like.
