Crustless Quiche


When you need a quick dinner in a flash or something a little special for breakfast or brunch, this is the recipe to turn to. It is so versatile since you can choose whatever fillings you sprinkle on. I always sprinkle in a few dehydrated onions and green peppers
to add some good flavor. This time I also added ham and olives. I left one corner only ham and cheese for one of my more particular children. You can use store bought biscuit mix or make your own. Click here for my recipe for biscuit mix. If you do not have powdered milk, just use 1 ½ cups milk in place of the water and the milk powder. A double batch fills a 9x13 pan.

Crustless Quiche


3 eggs
½ cup biscuit mix
1 ½ cups warm water
Dash pepper
4 ½ Tbsp dry milk powder
Bacon, ham, onion, green pepper, etc.
¼ cup margarine, melted
¾ cup shredded cheese

Combine eggs, water, milk powder, margarine, biscuit mix, and pepper in your blender. Pour into a greased 9-inch pie plate. Top with your choice of fillings and cheese. Bake at 350° F for 30–35 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving
