Taco Pulled Pork


This is a quick and easy way to flavor meat for tacos, tostadas, burritos, chimichangas, etc. We often use pork, but you can easily do it with chicken or beef as well. Start by cooking your meat long enough that it will pull apart. You'll find my instructions for cooking pulled pork here. I always have some unflavored pulled pork in the freezer to use as the base for meals. 



Start with about 4 cups of cooked, pulled pork. Place it in your crockpot. Add 8 oz of tomato sauce and sprinkle in 2-3 Tbsp taco seasoning. Cover and cook on high for 2-3 hours until heated through. Adjust flavor by adding more taco seasoning if needed. Serve as desired. 

Any leftovers can be frozen for an easy dinner another day. We also roll burritos with some of this inside and freeze them individually in plastic wrap. To reheat, just microwave for about 2 minutes in the plastic wrap and enjoy.

If you are in a hurry, you can heat this in the microwave instead of the crockpot. The flavors blend better when slow cooked, but we all know what it's like to be in a pinch at dinner time. Sometimes we choose the quick option.
