My Version of Sopitos




Here is the description from a local Mexican restaurant. I did my best to recreate them at home for dinner.

Sopitos
Homemade corn masa shells filled with beans and your choice of shredded beef or chicken. Topped with lettuce, cheese and tomato. Served with rice and beans, sour cream and guacamole.




This is the masa flour available at our local grocery stores. I just followed the recipe on the bag for tortillas.

Mix it all together - it feels a lot like salt dough.

Form into balls. At his point you can roll them out into tortillas, but we wanted sopitos, so I just flattened them into a thicker disk.

I then cooked them on my heated pancake griddle until they were very lightly browned on each side, flipping them halfway through cooking as you do pancakes.

The description above says they were filled with beans and meat. Really they were just topped with the yummy mixture so that is what we did. I used taco pulled pork as the meat and served refried beans and Mexican rice on the side.(I left the bacon bits, beans and corn out of my Mexican rice this time.)

They were delicious and a fun way to trade up taco night at our house!
