Faux Strawberry Jam


This jam is tasty and delicious! No one ever guesses that the main ingredient is green tomatoes! (They all just think it is strawberry jam.) We'll let them go right on thinking that way. It's bright red color makes it a wonderful choice for holiday gifts.



Chop green tomatoes in a food processor.


Stir chopped tomatoes and sugar together in a large sauce pan. Bring to a boil and boil for 10 minutes.


Stir in jello powder. I think the wild strawberry flavor tastes more like real strawberries, but sometimes I can't find it so I settle for the regular. You can also use raspberry jello if you want a raspberry flavored jam.Turn down to low and simmer for 20 minutes.


Fill hot, sterilized jars and seal or place in freezer containers and freeze. To seal, boil in a hot water bath for 10 minutes.


Faux Strawberry Jam

5½ cups chopped green tomatoes
3½ cups of sugar
6 oz strawberry or raspberry flavored gelatin

Combine chopped tomatoes and sugar in a large sauce pan. Bring to a boil and boil for 10 minutes. Add gelatin and reduce heat to low. Simmer for 20 minutes. Fill hot, sterilized jars and process in a boiling water bath for 10 minutes or fill freezer containers and freezeMakes about 3½ pints.
