Banana Bars


These bars are a great way to trade up what you have available for a quick breafast on the run or an after school snack. I often double the recipe and cook up two jelly roll pans at once. These bars freeze well.
I just put a layer of waxed paper between the stacks to keep them from sticking together once they thaw out. Other times, I mix up a double batch and then freeze half of the dough before baking to have ready to make fresh bars another day. To bake, just allow the batter to thaw and bake as directed.


Banana Bars


½ cup butter
1 tsp baking powder
½ cup sugar
1 tsp baking soda
½ cup brown sugar, packed
½ tsp salt
1 ¼ cups mashed banana
½ tsp cinnamon
1 tsp vanilla
1 cup chocolate chips
2 ½ cups all-purpose flour

1 cup old-fashoined oats 
2 Tbsp ground flax seed

Cream together the butter and sugars. Add bananas and vanilla. Add remaining ingredients. You can use half wheat flour and half white flour. Mix or stir together. Spread onto a greased jellyroll baking sheet. Bake at 350° F 13-15 minutes. Allow to cool before cutting into bars. Makes 48.

  1. These were very good! Aislynn has been begging me to make them again, which I will gladly do. I omitted the white sugar just to see how they tasted and they were plenty sweet.
