Bacon-wrapped Chicken Skewers

This is the all-time favorite skewer dinner at our house! I'm not claiming it to be the healthiest recipe out there since it does contain bacon, but oh, it is soooo good. We end up having it a few times each summer and sometimes in the winter. It is often requested for birthdays and other special occasions.
If you don't happen to have a grill, you could always bake these in the oven on a broiler pan. They are easy to keep the ingredients on hand for since everyting stores either in the pantry or the freezer. Pair them with a large garden salad and some homemade artisan bread and you've got a delicious meal!


Bacon-wrapped Chicken Skewers

¼ cup pineapple or mandarin orange juice
¼ cup yellow mustard
1 Tbsp brown sugar
4-6 boneless, skinless chicken breasts
1 lb sliced bacon


Combine juice, mustard, and brown sugar in a small bowl. Set aside. Cut chicken breasts into 1" cubes. Cut bacon slices in half. Wrap each chicken cube in a bacon slice and slide onto the skewers. If you run out of bacon, just slide the remaining chicken cubes onto skewers. The sauce is delicious on plain chicken too. Pre-heat the grill to 350°. Place the skewers on the grill and brush with some of the sauce. Grill for 10-12 minutes, turning and basting with more sauce every few minutes. When the chicken is no longer pink in the center and the juices run clear, it is ready to serve.

  1. Had this tonight, it was delicious. I didn't know what I was going to do for dinner this morning and then I saw this, so glad I did! I paired it with garlic butter pasta and a salad, delicious!! Miss you Tammy, how you all are well :)
