This Strawberry Slaw is an experiment
that worked! I am beginning to understand why so many people can tell you about their grandmother who was an amazing cook and never followed any recipes.The more time you spend in the kitchen following recipes, the easier it becomes to recognize flavors that would go good together and you begin cooking with a little of this and a pinch of that and coming up with something that just has to be written down before you forget what you did. This salad is one of those dishes. Everyone loved it so much that they wanted to be sure I could make it again so I scribbled some notes down at the dinner table and am now getting it in a more permanent location.

Strawberry Slaw
Salad:
1 pkg
coleslaw mix
½ lb
strawberries, washed and chopped
½ cup
chopped almonds
¼ cup real bacon
bits
2-3 Tbsp
chopped onion
Dressing:
½ cup
mayonnaise
¼ cup sugar
1 Tbsp apple
cider or red wine vinegar
Salt to
taste
Mix salad ingredients together. You can substitute 6 cups
shredded cabbage/carrot mix for the coleslaw mix. Combine dressing ingredients
in a small bowl. Stir until creamy. Drizzle over salad and toss to mix. Serve
immediately.
Note: I always use the precooked real bacon bits you can purchase
at Costco. Just heat them in the microwave for a few seconds to make them taste
freshly cooked - all the flavor without the mess!
