Zucchini Beef Stuffed French Bread




We continue to have zucchini growing in our garden. We love the fresh produce, but by this time in the season I have to get creative in how I use it. Here is a new recipe I came up with that we all just love! 


You can easily make the filling ahead of time if you need to in order to have dinner prep go fast. Carve out the loaf, mixing the bread crumbs back into the filling. Stuff the loaf.

Wrap in foil and then heat through in the oven or on the grill if you don't want to heat up the house. Then slice and enjoy! You could easily do this with idividual hard rolls if you'd prefer. This has become the new requested recipe when I ask the kids what I should do with the latest zucchini we have picked. I hope you enjoy it, too.


Zucchini Beef Stuffed French Bread

Filling:
1 Tbsp oil
2 cups shredded zucchini
½ cup chopped onion
½ cup chopped green pepper
¾ lb hamburger, browned
1 cup shredded cheddar cheese
1 Tbsp Worcestershire sauce
½ tsp dry mustard
salt and pepper to taste
bread crumbs from center of loaf

1 loaf French Bread

Sauté zucchini, onion, and green pepper in a little oil until tender. Stir in browned hamburger, shredded cheese and seasonings. Slice the French bread loaf in half the long way. Hollow out the middle of both sides. Tear the bread you have pulled out into smaller pieces and stir into your filling. Scoop filling into one side of the hollow loaf. Top with the other piece. Wrap entire loaf in aluminum foil. Heat on grill or in the oven at 350° for 10-15 minutes or until heated through.
